Beta carotene is what gives carrots their color.
I thought carrots were naturally purple, until their colour was altered?
You brought up something very interesting. Purple carrots were once the norm with other colors found in the wild rarely. Once they began to be cultivated and crossed, the orange carrot came to be which is what is commonly found today. Beta-carotene is simply what gives the orange carrots their color. Great question.
