While I wouldn’t consider this a recipe since there are no exact measurements, I would consider it a fantastic ‘pitch-it-in,’ lazy afternoon snack idea. I started making this several summers ago when my mom suggested it after having an exuberant amount of tomatoes available to eat up.
Salt and Pepper
Basil or other fresh herbs
Dice the tomatoes, mince the garlic and combine. Use as many tomatoes and as much garlic as you prefer. Drizzle with a little olive oil and mix in a bowl. Add salt and pepper to taste.
Fresh or dried basil can be added.
Keep in the refrigerator, covered, for up to a few days.
Some ways to enjoy this are with chips, on crackers, on bread, etc. My favorite?? I love to heat it up and then add it to either crackers or thin slice homemade bread with a sliver of goat cheese. …Uh, fabulous. It is such an easy snack (or small meal) and an easy way to enjoy fresh tomatoes.
